First off, although the name might indicate it has gluten in it, there is no gluten in glutinous rice flour. It does, however, exhibit many of the good characteristics that gluten-based flours bring to a recipe. It is great in bread and cake recipes, plus you can use it in place of regular flour to thicken up a soup, chowder, stew, or sauce.
Some of my clients are totally gluten free, and they task me with coming up with recipes; especially baked goods, that have the same firm mouthfeel of gluten-based products.
This flower really does an excellent job of achieving that goal. I do not want to make this into a cooking class, but you do not want to use 100% of this flour in your gluten-free recipes, just replace 25% of what the recipe calls for with this flour. So, if you are using 4 cups of gluten-free flour, use only three cups, and add one cup of this flour. The results in baking are nothing short of amazing.
I have tried other brands of glutinous rice flour and in my opinion, this is definitely one of the better ones.
If you cook/bake gluten free, you need this flour in your pantry.
