About Kamikoto Santoku Chef's Knife
Craftsmanship has been at the beating heart of Japan for hundreds of years; Kamikoto 神箏 builds on this legacy of steelmaking excellence to make tradition relevant. Each product is a masterclass in knifemaking; you can feel the spirit of the craftsman in the end piece.
Kamikoto is headquartered in Tokyo, Japan, and sources its steel from select and carefully chosen steel mills on Honshu 本州 island, from the prefectures of Niigata 新潟市, Ibaraki 茨城県and Kanagawa 神奈川県, among others. Kamikoto knives are made for a lifetime, the perfect balance of strength and aesthetic beauty. A solemn blade, the Kamikoto knife is designed for chefs and serious home cooks.
Over a thousand years of craftsmanship have inspired the final form of the Kamikoto Santoku, a handmade steel blade that will stand the test of time. The Santoku features high-quality steel from Honshu 本州, Japan – a steel with high corrosion resistance and durability. Each blade completes a rigorous quality verification process, and is tested and retested to ensure it meets the distinction and caliber of Kamikoto 神箏.
The Kamikoto Santoku blade is 7 inches long – taper ground on one side, and hollow ground on the other. Both blade and handle are satin finished for a subtle, yet stunning luster. This exquisite knife comes in a natural-colored ash wood box for storage and safekeeping. The Santoku handle is secure with a non-slip surface and is carefully sized to keep your hand from touching the cutting surface. You can tell the quality of Kamikoto 神箏 by the feel it gives you: substantial, yet light; slender, sharp, and fluid. Each knife is precision balanced and weighted for functionality and long-lasting performance. The Kamikoto 神箏 Santoku Chef’s Knife is made for a lifetime of use and excellent handling.
A Legacy of Excellence
Yamamoto-san is a fourth-generation master knifesmith and Chairman of the Kamikoto 神箏 Advisory Board. He continues to work in the company founded by his great-great grandfather in 1908. A family of swordsmiths, Yamamoto-san ancestors made their living forging traditional katana blades. The family refined steel and made katana blades for the Japanese Navy. Yamamoto-san’s sees the knife industry in Niigata as one born of necessity and demand, and is optimistic that this ancient craft will stay alive and flourish for many generations to come.
Kamikoto 神箏 and The Spirit of Service
Kamikoto appreciates that a good product is incomplete without great service. Our work does not end with the craftsmanship of a flawless blade. Understanding and anticipating a client's needs is integral to the Japanese spirit of omotenashi, or the philosophy of selfless hospitality. Kamikoto's goal is to respond to clients' needs clearly and quickly, delivering the same high quality in Kamikoto 神箏 service as is found in Kamikoto 神箏 products; and to strive to see things from our client's perspective as well as from our own.
Masters of Tradition — The World at a Standstill
Steelmaking has been at the beating heart of Honshu 本州, Japan’s largest island, for more than 800 years. From traditional techniques like Mokume-gane 木目金 – with its distinctive layered patterns to ironworking, swordsmithing and metal casting – Japan’s metal craft techniques were evolved and refined over the centuries. Kamikoto builds on this legacy to keep tradition alive in a changing world. Kamikoto is headquartered in Tokyo, Japan, and sources its steel from select and carefully chosen steel mills on Honshu 本州 island, from the prefectures of Niigata 新潟市, Ibaraki 茨城県and Kanagawa 神奈川県, among others.
As with many complex tasks, rather than a single craftsman, a group of dedicated artisans are involved in the making of a single knife. From the smith who forges the raw shape to an expert polisher, grinder, and a specialist who sharpens the blade to the traditional fine edge. Kamikoto knives stay true to Japan’s centuries-old legacy to make knives of exceptional quality and solemn beauty. Each Kamikoto knife is masterclass in skill; you feel the spirit of the craftsman flowing through the end piece. All Kamikoto knives come with certificates of authenticity – and a natural-ash wood box for safekeeping and careful preservation of the Kamikoto blade.
Every Kamikoto blade is forged from high-quality Japanese steel. Kamikoto sources its steel from select steel mills on Honshu 本州 island, from the prefectures of Niigata 新潟市, Ibaraki 茨城県 and Kanagawa 神奈川県, among others. We favor Japanese steel because their manufacturers demonstrate an unparalleled commitment to ensuring a given material is exactly what it says it is. Without exceptions. Taking pride in the quality of our materials and craft is an integral part of Kamikoto’s culture.

One of things you should know before the purchase is that these are single blade knives. In case some are not familiar with this, I'll put it briefly: most regular knives are double bladed which means the right and left side of knife are sharpened. With Kamikoto knives only right side got sharpened. This means that you have more control of the cut and can perform better for more sophisticated cuts. For example, sushi, so considering that I cook Asian cuisine more often, this takes me to another level of cooking. With these knives, I can actually make my own sashimi at home and also cut veggies more thinly so it opens up more possibilities for us. This can take a little getting used to, however. But once you know the techniques, EVERYTHING becomes easier.
Also, when I held the Kamikoto knives for the first time, I was thinking that they weigh in my hand really well. Bigger knives weighed lighter than I expected and the smaller one was heavier than I expected. The grips are good too. Not too sticky, and also with wet hands I can grip them well.
Especially I am a big fan of the vegetable knife (others are great too, of course). To me, it's a perfect size. Since it has a single blade, the vegetables doesn't stick to the back much.
I'd better wrap up here otherwise I can write it on and on. If you are a serious home cook or want to explore more serious techniques that can make your life and cuisine easier, I would definitely recommend these knives. That's why we put it as a full 5-star--even though we're quite picky, we couldn't find anything wrong with these.
