Vegan Apple Crumble

Apple Mixture:⁠ 2 lbs (~5-6) apples, peeled and diced or sliced⁠, 2 tbsp Let’s Do Organic Cassava Flour, 2 tbsp fresh squeezed lemon juice, 1/2 cup sugar, 1/2 tsp ground cinnamon

Crumble: 1/2 cup Cassava Flour

3/4 cup rolled oats

1/2 cup brown sugar

1/2 tsp ground cinnamon

6 tbsp vegan butter, cubed⁠

Instructions: Mix together the cut apples with the 2 tablespoons cassava flour, lemon juice, sugar and cinnamon. Transfer to a cast iron skillet or casserole dish. In a mixing bowl combine the cassava flour, rolled oats, brown sugar, and cinnamon. Add the vegan butter and crumble it with your hands until it’s combined and there is little to no dry mixture left behind. Top the apples with the crumble.

Bake at 350 ºF for 45-60 minutes, or until the apples are tender, the juices are thick and bubbly, and the top is crispy and golden. Enjoy warm with vegan vanilla ice cream!

Paleo Vegan Banana Flour Brownies

Ingredients: 3/4 cup (105g) coconut sugar, 3/4 cup (185g) almond butter, 2 flax eggs (2 tbsp ground flax + 4 tbsp water), 4 oz (110g) dark chocolate, melted, 3/4 cup (180g) almond milk, 1 tsp vanilla extract, 2/3 cup (80g) Let’s Do Organic Green Banana Flour

1/4 cup (20g) cacao powder, 1 tsp baking powder, 1/2 tsp salt, 1/2 cup (80g) chocolate chunks, 1/2 cup (55g) chopped walnuts

Instructions:

Preheat the oven to 350ºF.

Whisk together the coconut sugar, almond butter, prepared flax eggs, melted chocolate, almond milk, and vanilla (everything should be at room temperature or warmer, otherwise the chocolate will seize up and make it hard to mix). Add the green banana flour, cocoa powder, baking powder, and salt. Stir to combine, don’t over mix. Fold in the chocolate chunks and walnuts.

Transfer to a 9×9” baking pan (coated with nonstick spray).

Bake for 25 minutes at 350ºF.

Remove from the oven and cool completely before slicing (they will be very fragile and crumbly when hot).

Vegan Coconut Snowmen

Ingredients: 1 Cup Let’s Do Organic Shredded Coconut

8 Tbsp Let’s Do Organic Coconut Flour

5 Tbsp Native Forest Classic Coconut Milk

3 Tbsp Native Forest Virgin Coconut Oil (melted)

4 Tbsp Let’s Do Organic Sweetened Condensed Coconut Milk

2 Tbsp Maple Syrup

1/2 Tsp Vanilla Extract

Instructions: Place all ingredients in the food processor except for the sweetened condensed coconut milk. Process until you have a dough and scrape down the sides as you go. Add condensed coconut milk in once finely processed to help the mixture stick together.

Roll dough into three different sized balls to create your snowmen and then roll the balls in shredded coconut.

Assemble balls on on a cake stick. Use raisins for eyes, mouth, buttons and dried apricot for the nose.

Product Description

Let's Do. Organic Coconut Flour is made from certified organic fresh coconuts. After separating the rich, white coconut meat from its shell, we use pressurized steam to remove most of its fat. We thoroughly dry the defatted coconut before milling it to a fine cream colored flour. Although its texture is very similar to wheat flour, Let's Do. Organic Coconut Flour is completely gluten free, high in fiber and more than 20% protein. Organic Coconut Flour is wonderful in baked goods, and delicious in your favorite smoothies (with the benefit of adding healthful protein and fiber). Let's Do. Organic Coconut Flour may replace wheat flour completely in many recipes with great results (see our Brownies recipe below for a perfect example). In other recipes you may only want to replace up to 25% percent of the wheat or other grain flour with coconut flour. When you replace other flour in recipes, be sure to increase your liquid by the same measure. For example: if your recipe calls for 2 cups of flour and 1 cup of water, you could use ½ cup coconut flour plus 1½ cups any other flour, and then you must add an additional ½ cup water to total 1½ cups liquid. Try our recipes and experiment with your own. We invite you to send us your favorite recipes so that we can share them with others.
