Sharpen your Global knives with this two stage sharpener. It has a black and grey design and sharpening wheels made from whetstone to give your dull knives a sharp edge. There is a white wheel with a coarse grit that sharpens dull blades and a pink medium grit wheel for sharpening and polishing. A clear cover lets you see into the sharpener and protects you from the sharpening wheel while giving you sharp 18 degree edges. I know there was some negative reviews of the blades, but keeping the blades perpendicular, and not pushing down to hard, I got a good edge. I think if you push down too hard, you put the blade edge flat on the wheel, and grind off the edge, which would make the knife duller. Keep it perpendicular so it puts wheels faces against the blades faces and it will give you what you are looking for. But of course, a professional sharpening from someone who has been doing this type of thing for years would produce an amazing edge - probably for about the same cost as this little baby.
Simple to use and excellent sharpening. I had a minor chip on the clear plastic cover and the vendor replaced the order rapidly. Impressive customer service.
When I first bought my Globals I was warry of using my old ceramic stone on their extremely acute edge, so I bought the Shinkansen Sharpener to go with them. When they arrived, the knives' sharpness lived up to everything that's said about them, but after I ran the chef's knife through both slots several times... the knife got DULLER! Repeated use did not do any more harm to the blade, but it never improved either.
It seems that, because of it's simplicity, the Shinkansen Sharpener is best for returning very dull blades back to a servicable edge, but it will never get them really sharp.
